4 Ingredient Healthy Protein Pancakes

4 Ingredient Healthy Protein Pancakes

Pancakes have never been my thing. Takes too long, kitchen gets messy, whole house (even my hair) fills up with the smell of fried oil.  Well, 10 years ago maybe… Not anymore! Bye bye to the greasy process of pancake making.

Only 4 simple ingredients are used in this recipe. All you need to do – is to blend everything together and to have a good non-stick pan.

Protein powder is optional, but I love the richness and the vanilla aroma it brings to the pancakes.

4 Ingredient Healthy Protein Pancakes

Makes 15 small pancakes

1 cup coconut milk

2 ripe bananas

2 cups of oats

20 g Vanilla plant protein (I use Plantforce Synergy Protein)

Pintch of salt

1 Tbsp coconut oil

1.  Add all the ingredients to the blender in the same order as the ingredient list, except coconut oil. Blend until smooth. The consistency will be rather thick, so you might need to stop and scrape the batter down from the sides.

2.  Warm a non-stick pan with a tablespoon of coconut oil. Once hot, scoop the batter on to the pan and brown lightly on both sides.

3.  I do not re add oil after every round, I lower the heat to medium instead and it works like a charm for 5 more rounds.

4.  Serve with any goodies of your choice. I used fresh berries and agave syrup this time.
