Sweet Potato & Lentil Veggie Cakes

Who knew that a non-stick pan can solve all your life problems! Well, not all, but so many of them! I am not sure how I survived without it for so long! First of all, pancakes! I stopped making them long time ago, since every attempt of a healthier version of pancakes used to fail. Why? Because all my pans suck!

Secondly, falafels and veggie cakes! OH man, the endless possibilities now! I can mix whatever I find in my pantry and I can cook it without any hassle!


I sort of waited on getting a good non-stick pan for a while now because I usually like to invest into my kitchen utensils. And it was a huge mistake. I started reading about what I should choose, and most of the people vote for the cheap ones. Why? Because non-stick coating will fail eventually after few years or even less (depending on the care you give it) no matter if you paid 120€ or 30€ for the pan. So be smart! I bought one from Tefal, it was on sale and I paid 30€ for it.  Cannot be happier!


Of course, from the environmental perspective, the non-stick pans are the least friendly to our mother nature. But I always look at a bigger picture. If buying a non-recyclable thing is the only not environmentally friendly thing you do, it is OK. Also, if cooking with a non-stick pan makes you incorporate more meat-less alternatives – you already make a positive input for our nature.


These cakes are just a one tiny version of veggie cakes from all the wide options you actually have! Go check your fridge and pantry! Found any veggies or legumes? Mix it! Add the spices you like – DONE.


It’s a perfect lunch dish – it’s light and nutritious. It is a very good option for a meal prep too! I’m not going very deep into the details of the recipe, it's very obvious, so I will just leave you with the recipe here.

Sweet Potato & Lentil Veggie Cakes


1 medium sized sweet potato

1 package of cooked green lentils, drained from liquid

1 small onion, roughly cut

1 thumb size leek piece, roughly chopped

1 Tbsp Avocado oil (or any other cooking oil)

4 Tbsp Tapioca flour

4 cloves of garlic

A handful of parsley

1 Tbsp coriander

1 Tbsp cumin

1Tbsp sweet paprika powder

1 tsp cayenne pepper

Salt & Pepper



1. Grate sweet potato with the help of a food processor. I used a thinner grating disk. Remove grated sweet potato into a bigger mixing bowl.

2. Don’t wash food processor and just add onion chunks, garlic, leek, lentils, parsley, avocado oil, all the spices and pulse until it is all well mixed up and has a consistency of a porridge (still with some bigger chunks in it).

3. Pour out the lentil mixture onto the grated sweet potato, add tapioca flour and mix very well. Don't be afraid - use your hands!

4. Heat a non-stick pan. Using your hands form little cakes and cook for about 4-5 min on each side on a medium heat so that sweet potatoes get softer.
